A Thai inspired scallop and noodle main dish.

Recipe Ingredients for Tangerine-Sesame Scallops and Noodles

1/4 c. tangerine juice
3 T. reduced-sodium soy sauce
3 T. creamy peanut butter
2 T. toasted sesame oil
2 tsp. grated fresh ginger
2 tsp. grated tangerine zest
1/4 tsp ground red pepper
1 c. snow peas
2 carrots
10 oz. whole wheat spaghetti
16 oz. bay scallops
1 t. canola oil

Recipe Directions for Tangerine-Sesame Scallops and Noodles

  1. In large bowl combine juice, soy sauce, peanut butter, sesame oil, ginger, tangerine zest and half of the pepper.

  2. Bring large pot of water to a boil. Add peas and cook 1 minute. Remove with slotted spoon and plunge into bowl of cold water. Reserve water for spaghetti

  3. In the reserved water, cook spaghetti per package directs (omit salt). Drain and immediately toss with tangerine mixture, peas and carrots. Set aside.

  4. Season scallops with salt and the remaining pepper. In large nonstick skillet, hear canola oil over high hear. Cook scallops in patches, without touching each other. 3-4 minutes per side or until golden brown and just cooked through.

  5. Arrange pasta on serving plates, top with scallops.
