Found this recipe on about.com and changed a few things to suit our tastes.

Recipe Ingredients for Tangerine Chicken Stir Fry

2 tbsp. olive oil
24 oz. boneless, skinless chicken breasts
1/2 tsp. salt
1/8 tsp. pepper
8 oz. clementine juice
2 tbsp. honey
2 tbsp. whole wheat flour
1 cup frozen carrots (in bag with peas, onion and mushrooms)
2/3 cup frozen sugar snap peas
1/6 cup onion, chopped
1/6 cup mushrooms, sliced

Recipe Directions for Tangerine Chicken Stir Fry

  1. Heat oil in heavy skillet or wok

  2. Add chicken, salt and pepper

  3. Stir fry until chicken is cooked, 3-4 minutes

  4. Combine clementine juice, honey and flour in small bowl

  5. Add to chicken in skillet or wok along with frozen vegetables

  6. Stir fry 2-4 minutes until sauce thickens
