All my favorite veggies and italian spices with tofu for some protein.

Recipe Ingredients for Tami's Veggie and Tofu Soup edit

1 tbs extra virgin olive oil
1 medium red pepper
1 medium bell pepper
2 small zucchini
1 yellow squash
1 yellow onion
3 garlic cloves
29 oz. diced tomatoes
14 1/2 oz. vegetable broth
2 tbs tomato paste
4 celery stalks
3 carrots
8 oz. mushrooms
14 oz. firm tofu
1 tsp salt
1 tsp pepper
1/2 tbs red pepper flake
1 tsp basil
1 tsp oregano

Recipe Directions for Tami's Veggie and Tofu Soup edit

  1. Put olive oil in pan. Once hot, add garlic and onion. Let saute for two minutes. Then, add carrots, celery, and let soften for another minute. Add rest of the veggies one at a time, ending with the mushrooms, stirring so they each get coated with olive oil and yummy garlic and onion taste.

  2. Once veggies (especially peppers) are slightly softened, add vegetable broth, diced tomatoes, tomato paste, tofu, and seasonings.

  3. Bring to a boil. Once bubbly, bring heat down to medium/low to let it simmer. Let simmer covered for 20-30 minutes or desired veggie softness.
