Sweet, tart, hot sauce good for fish or grilled vegs.

Recipe Ingredients for Tamarind Sauce

14 ounces Tamarind Concentrate
3 c water
1/2 c low sodium soy sauce
1/2 c rice wine
1/2 c rice vinegar
1 cinnamon stick
1 star anise
3/4 c packed brown sugar
1/4 c cilantro leaves
1/4 c sliced green onion tops
2 cloves garlic, peeled and minced

Recipe Directions for Tamarind Sauce

  1. Break tamarind past into small pieces and place in 2 quart saucepan. Add water and bring to boil over medium heat. Remove from heat and let soak for 30 minutes, then mash tamarind with stiff whisk or potato masher until it forms a paste, adding a little more water as needed.

  2. Add soy sauce, rice wine, rice vinegar, cinnamon stick, anise and brown sugar and cook over medium heat for 30 minutes, stirring occasionally.

  3. Turn off heat. Remove the cinnamon stick and anise. Use rubber spatula to rub the paste through a course sieve. Stir in the cilantro, green onions and garlic and thin as necessary with water.
