Recipe Ingredients for Tamarind BBQ Tempeh and Sweet Potatoes

4 cloves garlic, minced
1 tbsp fresh ginger, minced
3/4 c vegetable broth
2 tsp arrowroot
1/4 c water
2 tbsp tomato paste
1 tbsp tamarind concentrate
3 tbsp maple syrup
2 tbsp soy sauce
1 tsp olive oil
1 tsp liquid smoke
1 1/2 lbs sweet potatoes, peeled and chopped
8 oz tempeh, chopped

Recipe Directions for Tamarind BBQ Tempeh and Sweet Potatoes

  1. Spray a 9 x 13-inch casserole dish with nonstick cooking spray. If using glass, line the bottom of the dish with parchment paper to prevent sticking.

  2. In a medium bowl, whisk together all of the sauce ingredients. Make sure that the tamarind is dissolved.

  3. Place the sweet potatoes and tempeh in the dish. Pour the sauce over them and use your hands to coat well. You can bake immediately or let marinate for an hour or more to get more flavor into the tempeh.

  4. When ready to bake, preheat the oven to 400 F. Cover the pan with foil and bake for about 25 minutes. Remove from the oven and remove the foil. Flip the tempeh and sweet potatoes, making sure to scrape the bottom with a spatula in case anything is sticking. Bake for another 30 minutes, flipping everything once. The sweet potatoes should be tender but not mushy, and the sauce should be thickened and coating everything.

  5. Serve with rice and a green vegetable.
