This warm winter soup is quick and easy to make and stores well in the refrigerator.

Recipe Ingredients for Tamara's Tortellini Soup

5 link Lean Turkey Italian Sausage
4 medium(61 g) Carrots
2 cup, diced Celery
1 cup, chopped Onions
8 ounce(28 g) Mushrooms, Portabella
29.983 oz Diced Tomatoes
15 oz Tomato Products
3 cup(240 g) Organic Vegetable Broth
3 cup Family Size Mixed Cheese Tortellini
4 cup(30 g) Spinach
1 tsp Garlic

Recipe Directions for Tamara's Tortellini Soup

  1. Spray the bottom of a large soup pot with olive oil spray to just cover the bottom.

  2. Saute the onion, carrots, celery, and mushrooms until onions are translucent.

  3. Add the sausage after taking it out of the casings. Break sausage into bits as it browns.

  4. Add garlic, tomatoes(diced and sauce), and broth. Add water as needed to cover the vegetables and meat in pot.

  5. Cover and simmer for 30 minutes until carrots are fork tender.

  6. Add the tortellini and bring to a boil. Cook 10 minutes uncovered stirring occasionally until tortellini are cooked through.

  7. Add spinach and stir in. Turn off the heat once spinach wilts.

  8. Serve in large bowls.
