Recipe Ingredients for Tamara's Super Healthy Sweet Potato Pancakes

2 cups uncooked oats
2 large eggs
3/10 cup yogurt
1/2 cup unsweetened applesauce
1 medium sweet potato
1 cup 1% milk

Recipe Directions for Tamara's Super Healthy Sweet Potato Pancakes

  1. Grind the oats finely in a food processor.

  2. Mix all ingredients and add 2 t. baking soda and cinnamon, nutmeg, ginger and salt to taste.

  3. Cook on griddle.
