vegetarian tamales (vegan if you swap out the butter) made with real fresh corn husks

Recipe Ingredients for tamales

3 cups masa harina
1/3 cup melted butter
1/3 cup olive oil
1/4 cup diced onion
2 cloves garlic
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1 ear sweet corn
1/4 cup diced tomatillo
3 tbsp salsa

Recipe Directions for tamales

  1. Put a pot of water on to boil, and boil a couple ears of corn for 10 minutes. Save the husks.

  2. Meanwhile, saute the onions and garlic for 1 minute in about 3 tbsp of the oil and/or butter. Add the peppers and saute another minute. Add the tomatillos, corn, and salsa and cook for another few minutes.

  3. Transfer the vegetables to a bowl and set aside. Deglaze the pan with several cups of the water used for boiling corn. This is your "broth".

  4. Melt the remaining butter and oil together in a small saucepan.

  5. In a mixer (or large bowl) mix the masa, melted butter/oil, and broth until the dough is about the consistency of peanut butter.

  6. Pat a handful of masa dough onto a large wide corn husk (overlap several husks if needed). Spoon some of the vegetable filling on top of the dough. Fold the nascent tamale so that the dough forms a seal all the way around the filling.

  7. Tie the tamale closed with scraps of corn husk (or fold it neatly - it's OK to leave one end open) and place the tamales, open end up, in a steamer basket or metal colander.

  8. Steam the tamales (over the remaining corn water, if you like) for about an hour or until the dough is firm.
