Recipe Ingredients for Tamale Pie

1 lb lean ground beef
1 cup onion, chopped
1 cup sweet red pepper, chopped
14 oz tomato sauce
1 1/2 cups corn
1/2 cup black olives, pitted and sliced
1 clove garlic
1 tbsp sugar
1 tsp salt
1 tbsp chili powder
1 tsp cayenne
1 1/2 cups cheddar cheese, shredded
3/4 cup cornmeal
1/2 tsp salt
2 cups water, cold
1 tbsp margarine, non-hydrogentaed

Recipe Directions for Tamale Pie

  1. Preheat oven to 375F

  2. Cook meat, onion, and red pepper in a large skillet till meat is lightly browned and vegetables are tender. Stir in tomato sauce, corn, olives, garlic, sugar, 1 tsp salt, chili powder, and cayenne.

  3. Simmer 20 to 25 minutes, or until thick.

  4. Add cheese; stir until melted.

  5. Turn into greased 9x9x2 inch baking dish.

  6. Stir cornmeal and 1/2 tsp salt into cold water.

  7. Cook and stir until thick. Add margarine; mix well. Spoon over hot meat mixture.

  8. Bake casserole at 375F about 40 minutes.
