Tamale Pie - Vegetarian/Core Recipe

Recipe Ingredients for Tamale Pie

1 cup corn meal
2 1/2 cups water
1 bell pepper, chopped
1 red onion, chopped
4 cloves garlic, minced
14 oz can black beans
14 1/2 oz can diced tomatoes
12 oz Morningstar Farms Meal Starters Grillers Recipe Crumbles
6 oz tomato paste
4 tsp chili powder
1/2 cup corn kernels
8 oz 50% light cheddar

Recipe Directions for Tamale Pie

  1. Preheat oven to 350. Spray a 9 x 13" casserole pan with Pam.

  2. Bring 2-1/4 cups water plus bouillon to a boil. Stir in cornmeal, and whisk until fairly thick and most lumps are gone (just a few minutes). Spread into bottom of 9x13 pan sprayed with cooking spray. Set aside.

  3. Brown onion and green pepper in a large skillet until starting to brown.

  4. Add ground beef and brown while crumbling the meat.

  5. Add chili powder, garlic, salt and pepper, and mix well.

  6. Add tomato paste, Ro-Tel, corn, and black beans. Stir together thoroughly.

  7. Spread over the cornmeal crust and top evenly with cheese. Bake 20-25 minutes at 350.

  8. Serve with FF sour cream.
