Adapted from Betty Crocker's New Cookbook Recipe

Recipe Ingredients for Tamale Lentil Casserole

1 tablespoon olive oil
1 cup onion
4 jalapeno peppers
2 cloves garlic
10 oz diced tomatoes
8 oz tomato sauce
1 1/4 cup dried lentils
1 1/4 oz taco seasoning mix

Recipe Directions for Tamale Lentil Casserole

  1. Chop onions, garlic and peppers.

  2. Heat oil in 3- quart saucepan over medium high heat. Cook onion, pepper and garlic in oil, strirring frequently until vegetables are tenders.

  3. Stir in water, lentils, and tomato sauce and seasoning mix, reduce heat to low. Partially cover and simmer 35 to 40 minutes or until lentils are tender.

  4. Heat over to 400 degrees. Grease 2-quart casserole dish

  5. Prepare Cornbread Topping (see recipe). Spoon lentils into casserole and spread topping evenly over lentil mixture. Bake uncovered 15 to 20 minutes until topping is golden brown.
