Corn-Bread topped tex mex style lentils

Recipe Ingredients for Tamale Lentil Casserole

1 tsp oil
3 cups water
2 cloves garlic, chopped
14 oz tomato sauce
1 large onion
1 1/4 cup lentil
1 bell pepper, chopped
1 oz taco seasoning

Topping:
2 cups corn meal
1/2 cup skim milk
8 1/2 oz cream-style corn
1 egg
1 cup grated cheese

Recipe Directions for Tamale Lentil Casserole

  1. Heat oil in a 3 quart pot over med heat. Cook onion, bell pepper and garlic in oil until tender. Stir in water, lentils, tomato sauce and seasoning. Bring to a boil, reduce heat and simmer partially covered for 35 min.

  2. Mix all topping ingredients in a medium bowl until moistened. Spoon lentil mixture into baking dish and spread topping evenly over top. Bake uncovered 15-20 min or until golden brown.
