A delicious potato and sausage soup with kale. Note: The serving size of 6 bowls is for very large bowls. If you were using a soup mug or something, it would be more like 8-10 servings.

Recipe Ingredients for A take on Zuppa Toscana

52 oz. russet potatoes (about 8 large)
1 lb spicy sausage
14 cups water
14 Chicken bouillon cubes
6 cups kale
2 cups buttermilk
2 cloves garlic
2 small onions
2 t olive oil

Recipe Directions for A take on Zuppa Toscana

  1. Saute onions and garlic in olive oil until done.

  2. Cook sausage.

  3. Add water, bouillon, thinly sliced potatoes (skin on), sausage, onions, and garlic to a large pot.

  4. Bring to a boil.

  5. Boil for about 20-30 minutes or until potatoes are very tender but not completely mushy. (This time may vary depending on how long it takes for the water to start boiling.

  6. Add kale and cook about 8 minutes longer.

  7. Add buttermilk and cook a further 2 minutes.

  8. Serve hot, possibly with a slice of bread.
