Wonderful, moist cake. Can be served with coffee.

Recipe Ingredients for Take the Cake

2 whole eggs
2 cups sugar
1 1/2 cup vegetable oil
5 cups chopped apples
1 cup chopped walnuts
3 cups all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. salt
1 tbsp. vanilla

Recipe Directions for Take the Cake

  1. In a large bowl, beat eggs. Then add sugar and vegetable oil.

  2. Once that's mixed up well, add peeled, cored and chopped apples, and then add chopped walnuts.

  3. In a separate bowl, sift together flour, baking soda, ground cinnamon and salt. Fold dry ingredients into the first mixture and blend well. Then add vanilla and mix it in.

  4. Pour into a floured and well greased 9" x 13" pan or two 8" or 9" round cake pans.

  5. Bake at 300 degrees F for an hour. Test the middle with a toothpick - it should be brown, pulling away from the sides just a bit.
