Our basic taco recipe that is really easy and yummy.

Recipe Ingredients for Tacos

6 whole wheat tortillas
3 servings taco shells (6 shells)
1 1/2 cups black beans , drained and rinsed (1 can)
1 cup Ro*tel , drained (1 can)
1 1/2 cups corn , drained (1 can)
1 cup brown rice
1 cup taco sauce
1 tbsp ground cumin

Recipe Directions for Tacos

  1. Prepare rice as directed on package. While rice is cooking, heat beans, corn, Ro*tel, taco sauce, and cumin on stovetop in a large pan. When rice is finished, add it too.

  2. I like to spread sour cream on my tortilla, break the taco shell in half and lay it on top, then spread guacamole on the shell before adding in the taco filling. Great with salsa too!
