Recipe Ingredients for Tacoma Danish Dough

15.93 oz Flour
7.33 oz Milk
1 egg
1.91 oz sugar
1 oz butter
0.32 oz salt
0.32 oz yeast
8 oz butter
4 oz Raspberry Jam

Recipe Directions for Tacoma Danish Dough

  1. Scale milk eggs and butter and a pinch of sugar into a microwave proof bowl. Heat mixture to 100 degrees, it should take about 30 seconds. The butter doesn't have to completely melt. This is just to take the cold out of the dairy.

  2. Scale Sugar and salt together. Scale flour into a 5qt mixer bowl. Add all of the dairy into the flour and mix for 5 minutes slowly on 1st speed adding all the sugar and salt. Turn to speed 2 and mix for 5 more minutes. The dough will seem like pie dough to begin with but it will get softer as the sugar is added.

  3. Pull dough out of the mixer bowl and let it ferment for 1 hour. While this is fermenting take the 8 oz or 2 sticks of butter and pound it into an 8" by 8" square between parchment sheets and place the large pat in the fridge.

  4. After the dough has fermented place it in the freezer for 15 to 30 minutes until it is completely cool. Once out of the freezer roll the dough out to 10.5" by 8" and place the butter pat flush to the 8 inch edge. Fold the 2" flap over the butter and then the butter and do over forming a roll with the butter in the center.

  5. Then roll the dough out to 8" by 12" inches and repeat the same fold. Do this 2 more times. You can rest the dough in the fridge for 30 minutes if it gets to soft.

  6. Refrigerate the dough over night and shape into the Danish you prefer. Use the raspberry jam as filling. Let rise for 1 to 2 hours and bake at 375 degrees until done.
