An excellent soup for the crock pot

Recipe Ingredients for Taco Soup

1 lb extra lean ground beef or ground turkey
1 medium onion, chopped
1 medium green bell pepper, chopped
3 tbsp taco seasoning
1/2 c water
4 c vegetable juice (like V8)
1 c chunky salsa

Recipe Directions for Taco Soup

  1. Brown the meat with the onion in nonstick skillet. Drain.

  2. Combine all soup ingredients in the slow cooker.

  3. Cover and cook on low for 6 - 8 hours.

  4. Serve with your choice of toppings, like lettuce, fresh tomato, shredded cheddar cheese,

  5. chopped green onions or chives, sour cream, and

  6. baked tortilla or corn chips (I suggest the new Multigrain ones)
