Recipe Ingredients for Taco Soup

1 large Onions
19 oz Vegetarian Burger
14 1/2 oz Kidney Beans - 50% less sodium
1 can (12 oz) yields Corn, Sweet, Yellow
4 oz Green Chilies
4 oz Unico Sliced Black Olives
29 oz Petite Cut Diced Tomatoes
3 teaspoons McCormick's Taco Seasoning
4 serving Beef Bouillon Bouillon Cubes
4 cup (8 fl oz) Water
2 1tsp Olive Oil

Recipe Directions for Taco Soup

  1. Saute chopped onion in olive oil till onions are transparent and begin to caramelize. Add burger and saute a few minutes more. (Can use extra lean ground beef, if preferred.)

  2. Drain and rinse kidney beans and corn; add to burger mixture. Add remaining ingredients. Bring to a boil; reduce heat and simmer gently for 45 minutes.

  3. Ladle into bowls and garnish each 3/4-cup serving with crushed tortilla chips, 1 oz. grated cheese, and a dollop of sour cream.
