Low calorie, low fat, high fiber, high protein. (Low sodium if prepared w/o Taco and Ranch seasonings).

Recipe Ingredients for Taco Soup

1 lb. chicken breast, meat only
1 cups pinto beans
1 cups kidney beans
1 cups black beans
14 oz. Ro-Tel tomatoes
14 oz. Stewed tomatoes
2 ears of corn
1 oz. Taco seasoning mix
1 oz. Ranch dressing mix
1/8 tsp. salt

Recipe Directions for Taco Soup

  1. In soup pot boil 3 beans til tender

  2. Boil, stew, bake or grill chicken breast til done

  3. Cool chicken

  4. Chop or shred chicken and add to beans in soup pot

  5. Add:

  6. Ro-Tel tomatoes

  7. Stewed tomatoes

  8. Corn

  9. Taco seasoning mix

  10. Ranch dressing mix

  11. Salt

  12. Simmer on stove top for 30-45 minutes
