Makes 6 servings



1 can of corn, 1 can of ranch style beans, 1 small can tomato paste, 1/2 cup light sour cream, 2 tablespoons of cream cheese 1/2 jar of salsa. 1 packet of taco seasoning For added heat use hot salsa.

Recipe Ingredients for Taco Soup

1 lb lean ground turkey
11 oz of corn
12 oz ranch style beans
6 oz of tomato paste
14 1/2 oz of vegetable broth
4 oz light sour cream
2 tablespoons cream cheese
8 oz salsa
2 teaspoons taco seasoning

Recipe Directions for Taco Soup

  1. Brown the meat

  2. Add taco seasoning as directed on package

  3. Add all ingredients except sour cream and cream cheese in a large pot

  4. Mix well

  5. Simmer for 20 minutes, stirring occasionally

  6. Add sour cream and cream cheese and mix well

  7. Simmer for 5 minutes, stirring occasionally

  8. Serve by it's self, with tortilla chips or soft tortillas
