Recipe Ingredients for Taco Soup

2 tbsp olive oil
2 large onions, chopped
56 oz vegetable broth
14 oz diced tomatoes
4 potatoes, diced
3 carrots, diced
1 tbsp chili powder
1 tbsp cumin
1 c cilantro, chopped
8 tbsp sour cream
8 oz Monterey jack cheese

Recipe Directions for Taco Soup

  1. Sweat onions in olive oil until clear.

  2. Add veggie broth and diced tomatoes. Bring to boil.

  3. Add potatoes, carrots, chili powder, cumin, and cilantro. Boil on medium for 20 minutes.

  4. Serve with 1 tbsp sour cream and 1 oz of cheese.
