Recipe Ingredients for Taco Skillet Supper

16 oz. ground beef
1 medium onion, chopped
16 oz. tomatoes
1 c. brown rice, regular
1 1/2 oz. taco seasoning mix
1 c. cheddar cheese, shredded
2 c. lettuce, shredded

Recipe Directions for Taco Skillet Supper

  1. Brown beef with onion in 10" skillet.

  2. Drain off fat.

  3. Drain and cut up tomatoes, reserving the juice.

  4. Add water to juice to make 2 1/2 cups liquid.

  5. Add tomatoes, liquid, rice and taco seasoning to the beef in skillet.

  6. Stir and bring to a boil.

  7. Reduce heat, cover and simmer until liquid is absorbed, about 25 minutes.

  8. Stir occasionally.

  9. Top with shredded cheese and lettuce before serving.
