Recipe Ingredients for Taco Salad

1 serving Cooking Spray Canola Oil
0.5 tsp Chili Powder
1 medium (2-1/2" dia) Onions
8 oz raw All Breast Meat Fresh Ground Turkey
0.13 tsp Pepper, Red Or Cayenne
0.25 cup (8 fl oz) Water
0.13 tsp Salt, Table
2 oz Tortilla Chips
3 cup, shredded or chopped Lettuce, Iceberg
1/2 cup Black Beans - 50% less sodium
1 large whole (3" dia) Tomatoes, Red, Ripe
2 Tablespoon Pumpkin Seeds
1 medium (4-1/8" long) Onions, Spring Or Scallions
2 oz Monterey Jack, Reduced Fat
2 tbsp Reduced Fat Sour Cream

Recipe Directions for Taco Salad

  1. Place a large skillet over medium heat and spray lightly with oil. Add the diced onion and cook, stirring frequently, until the onions begin to soften. Add the ground turkey, chili powder, cayenne pepper and salt. Stir until the turkey is cooked.

  2. Remove from the heat, let cool and then refrigerate.

  3. While the turkey is cooling slice the lettuce, drain and rinse the black beans, slice the tomatoes and shred the cheese.

  4. When ready to assemble place the tortilla chips in the bottom of a large bowl. Top with the lettuce and then the black beans. Arrange the tomato wedges around the edges.

  5. Top with the cooled turkey and sprinkle the pumpkin seeds, green onion and shredded cheese over the top.

  6. Spoon the sour cream and salsa on top and serve.
