Taco Salad Recipe

A substantial main dish salad. You could substitute ground chicken or turkey for the beef, and use lower fat cheese.

Recipe Ingredients for Taco Salad

1 lb lean ground beef
2 tbsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp red pepper flakes, crushed
1/2 tsp oregano
2 tsp dried minced onion
1 tsp paprika
3 tsp cumin, ground
1/4 tsp salt
1/8 tsp cayenne
1 tsp cornstarch
2/3 cup water
1 tbsp yogourt
1/4 cup salsa
10 oz romaine lettuce
1/4 cup cheddar cheese, shredded

Recipe Directions for Taco Salad

  1. Brown ground beef in a skillet and drain off all fat.

  2. Mix spices and cornstarch in a dish and then add about 3 tbsp to the drained beef and mix well. If you like it spicier, use more of the spice mixture.

  3. Add water and stir, continuing to cook until it begins to thicken. Remove from heat and allow to cool a bit.

  4. Mix yogourt and salsa.

  5. Place lettuce in a bowl and mix in the salsa and yogourt mixture as a dressing.

  6. Put the meat on top, grate the cheese over all, and serve.
