A low calorie taco salad minus the chips!

Recipe Ingredients for Taco Salad

10 ounce mixed salad greens
2 medium tomatoes
1/2 lb lean ground beef
2 tablespoons taco seasoning
2 cups kidney beans
1/2 cup salsa
6 teaspoons hot sauce
6 green onions
12 tablespoons fat free sour cream
1/2 cup reduced fat cheddar cheese

Recipe Directions for Taco Salad

  1. Mix kidney beans, salsa (some like catalina or french dressing, which ever you like), hot sauce, onions in a bowl.

  2. Crumble the ground beef with taco seasoning in a skillet, drain and let cool. Add to bean mixture.

  3. Mix greens and tomatoes.

  4. Pile greens, beans/beef, top with cheese and sour cream.

  5. I like to keep these all seperate, makes it easy to carry for lunches. Eliminating the cheese cuts out about 30 calories per serving.
