This lightened version is really easy to make. I sometimes substitute elk or bison for ground turkey for much the same calories/nutrients. You can also serve the meat mixture and the salad ingredients in toaco shells for the kids. Yummy

Recipe Ingredients for Taco Salad -Lite

1 lb of ground turkey
1 medium onion, finely chopped
1 medium bell pepper, finely chopped
1 cup fresh mushroom slices
1 Jalapeno pepper, finely chopped (optional)
2 garlic cloves, crushed (optional)
1 taco seasoning (1 pkg or 3 tbs of homemade)
3/4 cup water
2 heads of romaine lettuce, chopped
30 cherry tomatoes, halved
1/2 cup shredded cheddar cheese, low fat

Dressing:
1/4 cup mayonnaise, low fat
1/4 cup sour cream, low fat
1/4 cup Salsa, medium

Recipe Directions for Taco Salad -Lite

  1. Method: In large skillet brown onion, peppers, , add ground turkey and garlic and continue browning until cooked . Add taco seasoning and water and cook down until most liquid is absorbed Set aside. Chop washed romaine and tomatoes. Place equal portions onto 6 plates. Add turkey, garnish with cheddar cheese. In small bowl, mix dressing and salsa until pink. Add to salad top, if desired.

  2. (You can also crumble tortilla chips on top for crunch; but calories are not included in count)
