A delicious one-dish meal served on a bed of (2 cups) chopped romaine or iceberg. I use low-sodium black beans and pineapple salsa from Trader Joes. I top it with 1 ounce (2 tblsp.) of finely shredded Mexican cheese (calories not included here) - Serving Size is 326 grams which is approx. 1 1/2 cup (or 11.51 ounces)

Recipe Ingredients for Taco Salad w/Ground Beef, Beans, Basmati Rice, Corn & Pineapple Salsa

1 tablespoon olive oil
1/2 lb lean ground beef
1 large onion
1 1/2 cups frozen corn kernels
4 large tomatoes
1 1/2 cups cooked brown basmati rice
15 oz of black beans
1 tablespoon chili powder
1 1/2 teaspoons dried oregano
3/4 cup prepared salsa
1/2 cup chopped fresh cilantro
6 cups shredded iceberg lettuce

Recipe Directions for Taco Salad w/Ground Beef, Beans, Basmati Rice, Corn & Pineapple Salsa

  1. Cook the basmiti rice according to the directions on the package and set aside

  2. Brown the ground beef; remove from skillet and set aside

  3. Wipe any fat out of the skillet with a paper towel

  4. Chop the tomato and onion

  5. Add the onion, tomato and corn to skillet

  6. Add the rice and the beans

  7. Return the ground beef to the skillet

  8. Add the chili powder, the cilantro, the oregano, prepared salsa, sea salt and fresh ground pepper to taste

  9. When the tomato cooks down and all ingredients are combined, serve over the lettuce or put into taco shells and top with the additional ingredients and add the additional nutrients as necessary
