Taco Pie Recipe

Easy casserole dish. Serve with additional taco fixings on top, or alone with a side salad.

Recipe Ingredients for Taco Pie

1 lb lean ground beef
1/2 c chopped onion
1 oz taco seasoning mix
1 1/4 c low fat milk
4 oz chopped green chilis
3/4 c Bisquick
3 eggs
2 tomatoes
1 c low fat cheddar cheese

Recipe Directions for Taco Pie

Heat oven to 400 degrees. Grease pie plate. Cook beef and onion together until browned; drain. Stir in seasoning and spread into pie plate. (You can stop and freeze at this point. to serve, thaw and continue with the following) Rinse and drain chilis and sprinkle over pie mixture. Beat milk, baking mix and eggs until smooth and pour into pie plate. Bake 25 minutes and remove from oven. Slice tomatoes; top pie with tomatoes and cheese and return to the oven and bake until knife exits clean, 8-10 minutes. Allow to cool for a few minutes. If you like, top with shredded lettuce, diced tomatoes and a little more cheese
