Recipe Ingredients for Taco Pasta Salad

12 oz chicken breast
1 lb pasta
14 1/2 oz black beans
10 oz corn
2 medium tomatoes
8 oz monterey jack Cheese
1 1/2 cups salsa
1/3 cup olive oil
3 tbsp lime juice
1 tbsp cumin
1 tsp chili powder
1/2 tsp garlic powder
1/2 cup fresh cilantro

Recipe Directions for Taco Pasta Salad

  1. cook pasta al dente according to package directions. Drain & rinse with cold water.

  2. In a large bowl, combine the black beans, corn, tomatoes, salsa and cheese. add the cooled pasta & mix well.

  3. In another bowl, whisk together the olive ol, lime juice, garlic, cumin & chili powder. Pour over the pasta salad, add the cilantro & mix well. Season to taste with salt & pepper.

  4. Just before serving, stir in diced avocado (not listed in ingredients above)
