I use leftover roast beef and turn it into taco filling.

Recipe Ingredients for Taco meat

1 lb chuck roast, shredded
14 oz diced tomatoes
1 yellow onion, finely chopped
6 cloves garlic, minced
1 tablespoon chili powder
1 tsp cumin

Recipe Directions for Taco meat

  1. saute onions over medium heat until carmelized.

  2. Add garlic and cook for one minute.

  3. Add meat, tomatoes, chili powder and cumin.

  4. Let cook for 1-1 1/2 hours, or until most of the liquid has evaporated.
