Taco Chicken Recipe

One of my favorites that my mom used to make! One-pot wonder - just add some shredded cheese, sour cream and tortilla chips! Can be made as an appetizer or meal.

Recipe Ingredients for Taco Chicken

10 oz reduced-sodium Chicken broth
4 oz No Salt Added Tomatoes Sauce
1 cup brown rice
1 lb chicken breast tenderloins, diced
4 oz black olives, sliced
6 oz Niblets Whole Kernal Sweet Corn
1 small Taco Seasoning

Recipe Directions for Taco Chicken

  1. Heat a large skillet over medium-high heat. Brown chicken in skillet until outside is just browned. About 5 minutes.

  2. Add broth, sauce, seasoning packet and rice. Stir and bring to a boil. Cover, reduce heat to low and simmer, stirring occassionally about 25-30 minutes or until most liquid is gone.

  3. Uncover and stir in olives and corn. Heat through.
