Similar to Taco Skillet Supper but finished off in the oven with cheese on top. The recipe calculator could not find fat free or reduced fat cheese, so actual calorie count should be lower since I use a mixture of fat free and reduced fat cheese. You can use the cheese of your choice or mix it up.

Recipe Ingredients for Taco Casserole

1 pound ground turkey
1 cup rice
2 cups water
1 T. dry onion flakes
1 t. chili powder
2 cups corn, drained; reserve 1/2 c. liquid
2 cups prepared salsa
1 cup shredded cheddar cheese, reduced fat

Recipe Directions for Taco Casserole

  1. Cook 1 cup of rice in 2 cups of water until done.

  2. Brown meat and add onion and chili powder.

  3. Mix all together in a bowl with 1 jar of salsa.

  4. Pour in sprayed baking dish.

  5. Cooked covered at 350 degrees for 30 minutes.

  6. Take off lid, put cheese on top and cook for 5 more minutes.
