A great, quick easy dinner for a family of two to six. Make less fattening by using low fat cheese and sour cream. Use more or less chips and cheese as desired to taste.

Recipe Ingredients for Taco Casserole

2 lb ground beef
8 oz tomato juice
1/4 cup taco sauce
1 tsp oregano
1 tsp garlic powder
1 tsp chili powder
1/2 tsp salt
1 1/2 cup shredded cheddar cheese
1/4 bag nacho chips, crushed
1 chopped onion
1 chopped tomato
1 cup chopped lettuce
1 cup sour cream

Recipe Directions for Taco Casserole

  1. Cook beef, then let simmer in taco sauce, tomato juice and spices for 10 minutes.

  2. Put half of meat into 3 qt pan, cover with chips, then add remaining meat. Top with lettuce, onion, tomato. Add all the cheese, then top with remaining chips.

  3. Bake at 350 for 10-12 minutes, or unitl cheese is melted and is warm all the way through.

  4. Eat with extra chips on side with sour cream, if wanted.
