Recipe Ingredients for Taco Bake, with Eggplant

1 lb. ground Chicken, cooked
4 cups Spanish Rice
1 large Eggplant, peeled, diced small
1 medium Onion, chopped
1 large Green Pepper, diced
1 large Red Pepper, diced
12 oz. Tomatoes, diced
6 oz. salsa
2 cups Sharp Cheddar cheese, grated

Recipe Directions for Taco Bake, with Eggplant

  1. Set aside 1 cup of cheddar cheese. Once meat is cooked, mix together in a large bowl with the remaining ingredients; pour into

  2. 13 x 9 " pan. Bake at 375 degree's for 50 minutes; top with remaining cup of cheese, and bake for an additional 15 minutes.
