a wonderful baked rice dish from the Middle East.

Recipe Ingredients for tachine

2 cups long grain rice, rinsed thoroughly
1 cup low-fat yogurt
1/4 cup water, boiling
1 pinch saffron
4 tablespoons butter

Recipe Directions for tachine

  1. Thoroughly rinse the 2 cups of raw rice underwater several times.

  2. placed the rice in a medium saucepan with 3 cups of water. Bring to boil and simmer for six minutes. The rice will be very undercooked.

  3. while the rice is cooking add a pinch of saffron to the boiling water and allow to steep.

  4. Drain the rice and separate the rice in two portions by removing half of it to a mixing bowl. in a mixing bowl also add the yogurt and the saffron water. Along with two tablespoons of melted butter. Mix well.

  5. In a 9 x 13 baking dish place the other two tablespoons of melted butter completely coating the bottom. place the rice yogurt mixture into the pan smoothing it out to an even layer. Add the remainder of the half cooked rice on top of this layer. Cover the pan with foil and bake for one hour at 425°. the bottom will become golden brown and crisp. Invert the entire pan onto a platter to serve.
