Yummy Middle Eastern Salad made with bulgar wheat and fresh veggies

Recipe Ingredients for Taboulleh

8 cups Bulgar Wheat
2 large tomatoes
10 scallions
5 tablespoons lemon juice
3 cups Fresh Frozen Chopped Parsley
4 tablespoons extra virgin olive oil
1/2 teaspoon cumin
1 tablespoon dried mint
1 dash of salt
1 pepper to taste

Recipe Directions for Taboulleh

  1. Soak 2.5 cups of dry bulgar wheat in 3 cups of hot water, until absorbed.

  2. Chop tomatoes and scallon and chopped parsley. Add to bulgar. Add spices, oil and everything else. Chill for a few hours.
