Makes 8 servings



A Lebanese salad of wheat and parsley. Can add up to 5 cups of parsley to this recipe. Add additional lemon juice to taste.

Recipe Ingredients for taboulleh

1 cup wheat
1 cup water
1 1/2 cup parsley
3 tomatoes
1 cucumber
4 green onions
3 tablespoons chopped mint
1/4 cup lemon juice
1 tsp black pepper

Recipe Directions for taboulleh

  1. Soak the bulgar wheat in the hot water until all water is absorbed.

  2. Chop tomatoes, green onion, and cucumber finely and add to the soaked wheat.

  3. Mince the parsley and mint and add to the salad.

  4. Squeeze the juice of a lemon over the salad.
