Yummy, whole grain mediterranian salad.

Recipe Ingredients for Tabouli salad

1 cup bulgur
1/2 cup boiling water
1/2 tsp salt
1/4 cup olive oil
1/4 cup lemon juice
2 tsp. garlic, minced
1/2 cup parsley
1/2 cup carrots, shredded
1/2 cup chickpeas
1 tbsp mint, dried

Recipe Directions for Tabouli salad

  1. Add bulgur to boiling water with salt. Cover and let stand 20-30 minutes. Add lemon juice, olive oil and garlic.

  2. Refridgerate overnight. Add chickpeas, carrots and parsley before serving.
