Recipe Ingredients for Tabouli

1 cup bulgur
1 1/2 teaspoons salt
1/4 cup fresh lemon juice
1 teaspoon garlic
1/2 cup scallions
1/2 teaspoon mint
1/4 cup olive oil
1 tbs. fresh black pepper
2 tomatoes
1 cup fresh parsley
1/2 cup cooked chickpeas
1/2 cup carrot
1 chopped cucumber

Recipe Directions for Tabouli

  1. You should begin to soak the bulghar at least 3 hours before serving time.

  2. It needs to thoroughly marinate and chill.

  3. Combine bulghar, boiling water, and salt in a bowl.

  4. Cover and let stand 15-20 minutes, or until bulghar is chewable.

  5. Add lemon juice, garlic, oil, and mint, and mix thoroughly.

  6. Refrigerate 2-3 hours.

  7. Just before serving add the vegetables and mix gently. Correct seasonings.

  8. Garnish with olives.
