Usually tabouli is made with bulgur wheat but I only had millet on hand. This is a good way to get a variety of grains in your diet (as well as a healthy dose of greens!). Eat it as a side dish or salad.

Recipe Ingredients for Tabouli (Millet)

2 cups cooked millet
1 1/2 tsp salt
1/4 cup lemon juice
3 tbsp olive oil
3 tsp minced garlic
4 tbsp minced green onion
1 tbsp minced mint leaves
1 cup minced parsley
1 1/2 cups diced tomatoes

Recipe Directions for Tabouli (Millet)

  1. Add 1 cup of raw, uncooked millet to 2 cups of water in a saucepan. Bring to a boil. Cover, reduce heat and simmer for 20 minutes. Fluff with a fork.

  2. Add salt, lemon juice, olive oil, garlic and black pepper to taste and mix thoroughly. Cover tightly and refrigerate until about 30 minutes before serving.

  3. About 30 minutes before serving, stir in remaining ingredients and mix well.
