Light summer salad. Very refreshing

Recipe Ingredients for Tabouleh

12 oz. chick peas
1 cup cous cous
1 tomato
1 small cucumber
1/2 white onion
8 oz. parsley
6 oz. mint
1 tablespoon olive oil
2 tablespoons white wine vinegar
3/4 cup lemon juice
1 salt
1 pepper
1 cup vegetable broth

Recipe Directions for Tabouleh

  1. Cook cous cous in 1 cup vegetable broth.

  2. Drain chick peas.

  3. chop herbs very fine, dice vegetables.

  4. Mix with oil, vinegar and lemon juice to dress, salt and pepper to taste.
