recipe via the net; went over very well in our home. Easy to make ahead, and flavor will improve if made the day before.

Recipe Ingredients for Tabouleh

1 cup bulgur, medium grade
1 1/2 cups boiling water
1 cup chopped parsley
4 tablespoons of fresh mint, chopped
1 small onion, finely chopped
3 medium tomatoes, finely diced
1 tsp salt
1/2 teaspoon black pepper
1/4 cup lemon juice
1/4 cup extra virgin olive oil
1 cucumber, seeded & diced

Recipe Directions for Tabouleh

  1. In large mixing bowl, combine bulgur and water. Mix well, cover, and set aside for one hour.

  2. After the hour, mix remaining ingredients with bulgur, cover, and chill 1 hour or longer. The longer chilling allows the flavors to meld better.
