Tabouleh is a mediterranean salad often served at dinner with the main course. This healthy appetizer is a rich source of vitamin A, vitamin C, and even calcium. Though this recipe contains fat, 17% of it is unsaturated. This recipe is also rich in dietary fiber, a necessary component in one's diet. And Since this salad is created from fresh vegetables, it is a guaranteed healthy dish. However, one must not eat too much of it for it is high in sodium- a spoonful or 2 is appropriate. Tabouleh can also be enjoyed during lunch but is most appropriately eaten at dinner time. Overall, it is a healthy side dish, as long as it is balanced with other food and you drink plenty of water.

Recipe Ingredients for Tabouleh

1/4 cup bulgur (burghul)
2 cups chopped parsley (about 1 bunch)
1/2 cup chopped green onions (about 2 stalks)
1 big tomato
1/4 cup lemon, squeezed
1/2 tsp. mint (ground)
1/4 tsp. salt
1/4 cup lemon juice
1/4 cup olive oil
1 head of romaine lettuce (optional)

Recipe Directions for Tabouleh

  1. soak bulgur in lemon juice

  2. dice tomato

  3. add all ingredients into one big bowl; mix

  4. pour olive oil, lemon juice and add salt; mix

  5. on a large, flat plate, arrange leaves of lettuce in a circle, then pour tabouleh so it sits in the center
