Pumpkin pie meets caramel custard!

Recipe Ingredients for Tabitha's Pumpkin Flan

1/2 cup granulated sugar
3/4 cup light-brown sugar
1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp salt
1 cup cooked pumpkin
12 ounces evaporated skim milk
5 large eggs
1 tsp vanilla extract

Recipe Directions for Tabitha's Pumpkin Flan

  1. Oven to 350. Place granulated sugar in 9" cake/pie pan. Set in center of oven and bake until the sugar is caramel colored and melted. Swirl to cover the bottom of the pan.

  2. In large bowl, whisk together the brown sugar, spices and salt. Stir in pumpkin.

  3. In medium bowl, whisk together milk, eggs and vanilla. Pour into large bowl, and thoroughly blend the two together.

  4. In oven, set pie plate in a larger roasting pan. Pour custard into pie pan. Pour hot tap water into roasting pan til it reaches half way up on pie pan. Bake until custard is set (about 1 hour). Chill in fridge. Run a knife around the edge and invert onto a larger rimmed plate. Cut into 8 wedges.
