Middle Eastern cold salad -- delicious!

Recipe Ingredients for Tabbouli Salad

1 cup wheat (bulghar), uncooked
1 tsp vinegar
2 cups boiling water
2 tbsp olives (green or black), chopped
1/4 cup olive oil
1/2 cup celery, diced
1/4 cup lemon juice
1/4 cup feta cheese, diced
1 tsp salt
1 medium cucumber, diced
1/4 tsp pepper
1/2 cup corn, cooked
1/3 cup green pepper, chopped
1/3 cup sweet red pepper, chopped
1/4 cup fresh mint, chopped
1/4 cup green onion, chopped
1 large tomato, diced

Recipe Directions for Tabbouli Salad

  1. Pour boiling water over bulghar wheat in large bowl. Let stand 1 hour. Drain well in colander and return to bowl.

  2. Add remaining desired ingredients (feel free to toss in anything else you please!) and blend well. Chill at least 2 hours. Serve on lettuce.
