Fresh Tabbouleh, to be served with Falafel

Recipe Ingredients for Tabbouleh

1 large (8-1/4" long) Cucumber, Peeled
3 tomato Tomatoes, Red, Ripe
3 oz Mint
1 cup Parsley
5 medium (4-1/8" long) Onions, Spring Or Scallions
0.5 cup Bulgur Wheat
0.25 cup Olive Oil
0.25 cup Lemon Juice
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
0.25 tsp Allspice, Ground

Recipe Directions for Tabbouleh

  1. Pour 1 C boiling water over the bulgur wheat, cover and let stand for 30 min. Then press excess liquid out with a wooden spoon.

  2. Chop all vegetables and herbs finely and put into a bowl with bulgur wheat.

  3. Whisk lemon juice, olive oil and spices together. Pour dressing over other ingredients and toss to mix.
