Recipe Ingredients for Tabbouleh

3/4 c bulgur
3 c water
2 cups parsley, finely chopped
2 tomatoes, seeded and chopped
4 scallions, finely chopped
1/2 c lemon juice
1/4 tsp salt
1/4 tsp pepper
1/2 c olive oil

Recipe Directions for Tabbouleh

  1. Place bulger in large bowl with water. Let soak for 20-30 minutes, then drain. Place soaked bulger in clean towel and squeeze out excess moisture. Return to bowl.

  2. Add parsley, tomatoes, scallions, lemon juice, salt, and pepper. Stir together. Set aside for 15-20 minutes to allow flavors to mingle.

  3. Adjust seasoning and stir in the olive oil. Serve chilled or at room temperature.
