Middle Eastern cracked wheat salad

Recipe Ingredients for Tabbouleh

1 cup bulgur wheat
1/2 cup olive oil
1/3 cup lemon juice
1 cup parsley
1/2 cup scallions
2 medium tomatoes
1 teaspoon garlic salt
1/2 teaspoon pepper

Recipe Directions for Tabbouleh

  1. Place the bulgar in a bowl and cover with about 2 inches of water. Let stand until softened, but still slightly resistant to bite, about 1 hour.

  2. Drain well. Place the bulgar in a clean towel and squeeze out as much excess water as possible.

  3. In a bowl, combine all ingredients and mix well. Add garlic paste and/or chopped mint leaves to taste. Serve chilled on top of salad.
