A delicious twist on eggplant! Add tofu for a delicious main course.

Recipe Ingredients for Szechuan Eggplant

2 pounds eggplant, sliced lengthwise
3 tbsp hoisin sauce
4 tsp ketchup
2 tsp soy sauce
2 tsp rice wine vinegar
2 tsp sesame oil
2 tsp chili sauce, with garlic
2 tsp orange peel, grated
1/2 cup fresh orange juice, From two oranges

Recipe Directions for Szechuan Eggplant

  1. Combine all ingredients in a one gallon plastic bag. Squeeze out all the excess air and seal the bag.

  2. Allow to marinate for 30 minutes to 1 hour.

  3. Preheat grill to medium.

  4. Place eggplant slices on the grill and cook until soft and lightly browned. Baste with any sauce left in the bag.

  5. Enjoy!
