Recipe Ingredients for Szechuan Chicken Stir-Fry

3 1tsp Oil, Sesame
4.17 oz Chicken Broth
2 tbsp Soy Sauce
0.52 oz Rice Vinegar
0.05 cup Chili Paste
0.04 cup Cornstarch
1/4 tsp Salt, Table
2 tbsp Grapeseed Oil
16 oz Boneless Skinless Chicken Tenderloins
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
8.35 oz Snow Peas
1 medium raw Onion Red
1 1/2 tbsp Ginger, Ground
3 tsp Garlic
2 cup (1" pieces) Cauliflower
1/4 cup, chopped Onions, Spring Or Scallions
1/4 cup Peanuts, All Types, Dry-roasted

Recipe Directions for Szechuan Chicken Stir-Fry

  1. Stir together two teaspoons sesame oil, broth, soy sauce, rice vinegar, chile paste, cornstarch and salt.

  2. Heat up a medium wok over medium-high heat.

  3. Add remaining sesame oil and one tablespoon grapeseed oil to the wok, swirling to coat.

  4. Add the chicken, stir-fry for 2-3 minutes, then set aside.

  5. Re-coat the wok with the remaining grapeseed oil.

  6. Add in the peppers, snow peas, onion, ginger, and garlic.

  7. Stir-fry the veggies for 1-2 minutes until heated through but still firm.

  8. Add broth mixture and cook for 30 seconds or until thickened.

  9. Add the chicken back into the wok and cook for 4-5 minutes or until cooked through.

  10. Divide the two cups of riced cauliflower among four bowls.

  11. Top each with a cup of the Szechuan chicken and veggies.

  12. Garnish with the green onions and peanuts and serve.
